Recommended Cookbooks

One of my favorite cookbooks is Decolonize Your Diet by Luz Calvo and Catriona Rueda Esquibel. This cookbook is one of the reasons I was inspired to further explore my Mexican heritage through food. The cookbook has plenty of healing plant-based Mexican-American recipes. The authors also delve into the history of Mexican food, which was mostly plant-based up until the European colonization, which introduced meats, sugar, and oil into the Mexican diet. As someone who's grandparents suffered diabetes and heart disease, it was great learning that going back to our roots can be a part of our healing process.
