Her instructions are always very vague, but after years of eating her homemade dishes and watching her cook, I use my instincts to guide me through the cooking process. Enchiladas Verdes

This dish is a favorite in my family, and we have asked our grandmother to make it for us on our birthday plenty of times. The tangy and spicy flavor of salsa verde is hard to resist.

Albondigas

Albondigas means meatballs in Spanish. These meatballs have a piece of a hard boiled egg inside and are then doused in a rich tomato sauce. This is usually eaten with some rice and tortillas and is the ultimate comfort food.
